Taste the egg salad mixture and adjust the seasonings as needed.

Spread a spoonful of the egg salad mixture onto a slice of bread. Optionally, add lettuce on top of the egg salad.

Top with another slice of bread to form a sandwich. Repeat with the remaining egg salad mixture and bread slices to make about 4 sandwiches.

Store any leftover egg salad in an airtight container in the refrigerator for up to 5 days, depending on the freshness of the eggs.


– 6 large hard-boiled eggs, peeled – 3-4 tablespoons mayonnaise (or Greek yogurt), to taste – 1 teaspoon yellow mustard – Salt and pepper, to taste – 8 slices sandwich bread – Lettuce (optional), for serving


1. Mash the hard-boiled eggs in a bowl.

2. Add mustard, mayonnaise (or Greek yogurt), salt, and pepper to the mashed eggs. Mix well until everything is combined.
